Few drops red food coloring

1 cup vegetable shortening, plus 3 tablespoons

1 cup sugar

1 egg, beaten

1 teaspoon almond extract

2 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt
Directions:

Preheat oven to 350°F (175°C). Prepare a small bowl with a few drops of red food coloring and set aside.

In a mixing bowl, beat the shortening and sugar together with an electric mixer until creamy.

Add the egg and almond extract, beating until fully incorporated.

In a separate bowl, sift together the flour, baking soda, and salt. Gradually stir this dry mixture into the creamed mixture until well combined.

Using a spoon, scoop a scant tablespoon of dough and roll into a walnut-sized ball. Place on an ungreased cookie sheet.

Press each ball slightly on top with your thumb to create a small flat spot (do not fully flatten).

Dip the end of a bamboo chopstick into the red food coloring and dot the center of each cookie.
